During the interview, I explained how the creation of a gastronomic ice cream starts with a spark: a traditional dish or a familiar flavor combination that stimulates the imagination. From there, the process becomes a search for how to best balance textures and flavors, playing with techniques such as infusion and flavor layering. The result is always a balanced dish in which ice cream is not just an accompaniment, but a leading player.
