August brings a new wave of recipes to the world of the Gelato Project: version 9.3 is a bold, inclusive and creative collection. From experiments with spirits to hypoglycemic sorbets, via mouthwatering variegations and a special closing chapter.
Here are the highlights of this update!
No Fuzz recipes getting richer and richer
They continue the “no fuzz” recipes, which are prepared without complex equipment but with the ingredients you have at home!
- Haribo licorice ice cream
- Kumquat sorbet
Alcoholic ice creams and sorbets
Three new alcoholic recipes, each built on a different distillate and balanced for tightness and taste:
- Absinthe sorbet with green apple and mint: a sorbet that plays with the intense herbaceous notes of absinthe, refreshed by crisp green apple and fresh mint. Unusual, aromatic and surprisingly balanced.
- Dark chocolate ice cream with peated scotch: an ice cream for adult palates. Intense and lingering dark, smoky and complex thanks to a peaty Scotch whisky. Meditation.
- Agricultural rum sorbet with roasted pineapple and lime: the scent of sugarcane blends with the caramelized sweetness of roasted pineapple and the tartness of lime. Exotic, textured, perfect after dinner.
- Raisin and rum sorbet: a classic turned cool. Raisins and dark rum meet in a creamy, aromatic sorbet, reminiscent of the taste of a traditional dessert but in a summer version.
Hypoglycemic ice cream
A new strand for those seeking a reduced glycemic load, with classic and mouth-watering pairings:
- Mint and chocolate ice cream
- Rice and milk ice cream
- Coffee ice cream
- Melon sorbet
- Extradark vegan chocolate ice cream (water base)
Chapter “Kids Ice Cream.”
This version also introduces a new chapter devoted entirely to children’s dreams. A collection of recipes born from imaginative and colorful requests, turning children’s ideas into real balanced ice creams. If your son or daughter has a special flavor in mind, he or she can draw it and send it in – I will gladly turn it into a real recipe. Details for participating can be found within the chapter.


Ice cream stories wanted
As of version 8.1, I have included the chapter on Gelato Stories to give additional space for personalization to the readers and readers of the Gelato Project!
They can be curious anecdotes, funny episodes, romantic stories of family recipes passed down through generations, old ice cream makers found in the attic, dreams that became ice cream parlors. Perhaps the memory of a flavor tasted as a child and never forgotten, a journey that led you to discover an amazing ice cream, or the inspiration that led to the creation of a new flavor.
Ice cream is emotion, memory and passion. Now I want to collect and share the stories that make it even more special.

Corrections & improvements
Given the countless questions received in the community or via email about where to find the neutrals mentioned in the recipes, I have moved the whole part about homemade neutrals to the introduction, hoping you will at least read the introduction before diving into the recipes!
As the book gets bigger and bigger, I also found it appropriate to include a reading guide to help you browse Gelato Project and find everything you need!

The “Gelato Project” is a unique book where supporters become an integral part of the creative process. It is an ice cream recipe book that grows and evolves each month, enriched with new recipes requested by you. Each recipe is professionally balanced, making it perfect for making either at home or in the ice cream parlor. The magic of the project lies in the ability you have to request specific recipes, making the book a collective work tailored to those who support it.
How to become a supporter (buy the book)
The progress of the book is closely linked to the number of supporters and their participation. The more the number of supporters grows, the greater will be the number of recipes you will find in each update.
To purchase the book and thus become a supporter, simply purchase the product from the shop!

How to download the book (if you are already a supporter)
Once you become a supporter, you will have access to the book for 1 full year and then be able to download updates at no additional cost!
The latest version of the book can always be found in the Download section of the user area.
How to request recipes and give feedback (supporters only)
To make your requests (recipes, changes, general feedback) just go to the e-learning section and open the Gelato Project to find the feedback form. Requests sent from there automatically end up in the Kanban Board (explained below) from which I take my cue to continue working on the book!
What is planned in the next versions?
In complete transparency, you can check at any time the “Kanban Board” of the project in which you can find the incoming requests, the wish list, the “work in progress” and what is planned for the next edition.
What will be in the next versions? This is for you to decide 🙂 I will just try to fulfill most of your wishes, consistent with the idea of the book 😉
